Roasted Potato Vegan Salad
- 2 slices Lamyong Vegetarian Soy Fillets
- 3 medium potatoes (peeled and cut into quarters)
- 5 baby tomatoes (cut in halves)
- 1 small zucchini (cut into same size as potatoes)
- 100g spinach
- 10ml olive oil
- 1 baby parsley (for garnish)
- 3 dried bay leaves
- Combine potatoes with 5ml of oil in medium size baking tray. Season with salt and pepper. Bake in oven at 180 degrees Celsius for 10min.
- Grill Lamyong Vegetarian Soy Fillet until well heated and cut each slices into 6 pieces.
- Mix tomatoes, zucchini and remaining olive oil in a salad bowl. Toss to combine then add spinach leaves and grilled Lamyong Vegetarian Soy Fillet. Mix well.
- Place salad on dish and garnish with parsley. Ready to serve.
