Recipe: Vegan Spanish Tortilla de Patata (Vegan Spanish Potato Omelette)

Serves 4

Ingredients:

  • 2 slices Lamyong Vegan Bacon Strips
  • 600g or 4 medium potatoes
  • 1.5 tbsp extra virgin olive oil
  • 1.2 tsp pink salt
  • 1/4 cup soy milk
  • 300g silken tofu
  • 1 tsp Dijon mustard
  • 1/3 cup gram (chickpea) flour
  • 2 tbsp nutritional yeast flakes
  • 2 tbsp cornflour
  • 1/4 tsp ground tumeric
  • 1/4 black salt- optional

Method:

  1. Defrost, chop vegan bacon strips into small pieces. Pan fry till crisp, remove from heat. Leave to cool.
  2. Boil water in a medium pot.
  3. Peel potatoes, cut into 0.5cm thick slices. Boil potatoes for 10mins or until tender. Drain.
  4. Heat olive oil in large non stick frying pan. Add potatoes into frying pan. Cook for 2 mins on medium heat, stirring regularly until potatoes are fully coated in the oil and salt. Add more salt and oil if needed. Turn off heat.
  5. To make vegan omelette batter: place soy milk, tofu, dijon mustard, gram flour, nutritional yeast, cornflour, tumeric and black salt in a large mixing bowl, Blend smooth with a hand blender. Add cooked potatoes and half of the vegan bacon to the batter. Stir through.
  6. Coat oil onto a 22cm wide oven safe frying pan. Heat pan in medium heat then pour omelette batter into the pan. Use a silicon spatula to distribute it evenly, smooth the top edges. Cook for 15mins on medium high heat or until edges start to firm up. Turn off heat.
  7. Preheat grill. Place frying pan under the grill for appx 3mins until omelette is lightly browned. Leave to rest for 5mins. Transfer to serving plate then sprinkle on top remaining vegan bacon. Ready to serve warm or cold.
